RAW MINT SLICE

  
Chocolate + mint, what more could you want? This gorgeous creation is
just as tasty as the original bikkies, minus all the nasties. I've tried and
tested a few different raw slice recipes, and adapted them to create
my ultimate favorite... this is the result!

WHAT YOU NEED:

BASE
1 ½ Cups of nuts (I use almonds)
7 Medjool dates (or approx 14 regular pitted dates, soaked)
½ tsp Cinnamon
1 tsp Vanilla powder
½ Himalayan pink salt
2 tbs Cacao powder
MINTY CENTRE
1 Cup of cashews, soaked for at least 2 hours (I soak mine over night)
3 tbs Coconut oil, softened
¼ Cup coconut butter
3 tbs Rice malt syrup or 100% natural maple syrup
1 tsp Vanilla powder
1 tsp Himalayan pink salt
CHOC TOP
1 Block of good quality dark chocolate (70%)
3 tbs Coconut oil

WHAT YOU NEED TO DO:

-Blitz together base ingredients (you made need to add a tbs or so of water if mixture is not combining), press into lined slice/brownie tin, place in freezer.
-Blitz together minty centre ingredients until smooth, spread over base and return to freezer.
-Allow to set for at least 30 minutes.
-Melt dark chocolate and coconut oil, spread over minty centre and return to freezer.
-Allow to set for at least 1 hour.
-Remove from freezer and allow to sit at room temp for approx 10 minutes (so that the top layer doesn’t crack when cutting), then run sharp knife under hot water, and cut into squares.
-Return to freezer to store. Will keep for a few weeks (our never lasts longer than 1 week anyway!)
